Pasta Ala Vodka

Note: This was my first attempt at this recipe and I think it's still pretty good, please look at this second version (Penne With Vodka Sauce) as it may be my favorite of the two though it is more complex and has a longer preparation time.
 
Serves: 4
Ingredients:
• 1 small onion chopped
• 1 tablespoon fresh chopped basil
• 2 cloves coarsely chopped garlic
• 1/4 cup olive oil
• 1.5 lb tomatoes, drained
    (or 28 oz can of Italian stewed tomatoes)
• 1/2 teaspoon hot red pepper flakes
• 2 tablespoons pepper flavored vodka
• 1 cup half&half
• 1/4 cup chopped Italian parsley
• 1 lb pasta (preferably penne)
• Salt and pepper to taste

To prepare:
Heat olive oil and sauté garlic and onion for 3 minutes. Add tomatoes and basil; cook for 20 minutes. Add red pepper flakes and season with salt and pepper. Blend the mixture in the pot with a hand blender until mostly smooth. Put the sauce on low heat and boil the pasta. Once the pasta is cooked, drain and add to the tomato mixture. Add the vodka, increase heat slightly and stir for 1 minute then add the half & half. Stir for another minute, taste for salt and pepper. Sprinkle with parsley and serve.
