Chili

Serves: 6 - 8 people
 
Ingredients:
• 1 package Caroll Shelby's Chili Mix
• 1 - 1.5 lbs beef
• 1 - 1.5 lbs turkey
• 1 can black beans
• 1 can pinto beans (Ranch Style)
• 1 can Rotel Orginal
• 1 can chopped tomatoes
• 1 can stewed tomatoes
• 1/3 - 1/2 chopped onion
• 1/2 chopped red pepper

Carroll Shelby is the designer of the Shelby Cobra as well as the subsequent Shelby Mustangs he built for Ford, making him a household name in the 1960s.  Interestingly enough, he also markets an excellent chili recipe dating back to 1967 and his Terlingua Texas ranch.  Though he makes a great base chili mix to start this recipe, I'd personally rather have one of his Shelby Cobra's given the choice ...

To prepare:
 
Mix all ingredients (except meat and onions) in a large stock pot and slowly bring to a simmer.
 
Separately, brown the beef/turkey mix with chopped onions and drain when cooked.
Add the beef/turkey/onion mix to the simmering stock pot and let cook for about an hour (minimum).
 
Note: Leftover spaghetti sauce can also be used with the canned tomatoes.  You may wish to only use 1/2 the cayenne in the Caroll Shelby's Chili Mix as it may be a bit spicy otherwise.
